Oaffles: Oat Waffles

Do you love oatmeal? Do you eat it every day but sometimes wish you had a nutritional breakfast alternative that still gives your oatmeal fix? Well, good news, why not waffles or pancakes made from oat flour? They are delicious, full of great nutrition, and taste amazing when you pair them with delicious seasonal fruits and maple syrup! Yum.

Oaffles — cute name, don’t you think? — are waffles made with oat flour, like our oats pancakes, but with the added benefit of being crispy on the outside and soft on the inside. They make for wholesome and tasty breakfast and are quick and easy to make. You won’t regret it.

 1 ½ cups oats flour
 2 tbsp baking powder
 ½ tsp salt
 1 pinch cinnamon
 ¾ cup milk
 ¼ cup butter
 2 eggs
 2 tbsp maple syrup
 1 tbsp vanilla extract

In a mixing bowl, whisk together the dry ingredients (first four). In a separate bowl, mix together all the wet ingredients.

Stir the wet ingredients into the dry until no more big lumps are present. Let the batter rest for 10 mins.

Pour the batter into waffle iron and in just a few minutes, you get to enjoy freshly made waffles!
