Ice cream ingredients
 2 cups whole milk
 1 cup Kefir or Lassi
 ¼ cup maple syrup
 1 cup fresh fig

 1 cup almonds
 3 tbsp honey
 ½ tsp sea salt

Preheat oven to 350F. Warm the honey just so it liquefies and pour it over the almonds.
Spread the almond/honey mixture onto a parchment lined baking pan.
Bake for around 15-25 minutes shaking the almonds every few minutes to prevent burning one side.

Making ice cream directions

Preheat the oven to 400 F. Place a piece of parchment paper over the baking pan. Spread the halved figs evenly over the roasting pan. Bake for 15 to 20 minutes or until caramelized and set aside to cool.

In a bowl whisk together milk and maple syrup, add in the caramelized figs. Let it chill over night or minimum 4 hours.

Prepare ice cream according to your ice cream machine manufacturer's instruction.

Add in the honey roasted almonds towards the last few mins of ice cream churning.
