Preheat oven to 425 F degrees.
In a small bowl, stir together oats, cinnamon, ginger, and maple syrup. Set aside.
In a large bowl, mix together the flour, baking powder, salt and sugar. Cut the cold butter into small pieces and mix it in.
Whisk together banana, milk, coffee, and vanilla in a small bowl.
Pour the liquid mix into the dry mix. Use a spatula to fold the mix but don't overmix the dough.
Make the dough into a pizza shape (about an inch tall) and cut it into eight slices. Brush top with a bit of milk and sprinkle the oat mixture over each scone.
Bake for 13 minutes or until they are turning golden brown. Let it cool and enjoy!
