Honey Roasted Almonds and Caramelized Fig ice cream

Who doesn’t love ice cream? Rarely would we ever say no to ice cream because it tastes so good! Yet we feel guilty afterwards because it is often packed with excessive and unnecessary amounts of sugar and cream that’s not good for our health.

Well, here’s an ice cream recipe that allows you to indulge without guilt! It’s nutty, sweet and creamy, and made with natural ingredients. Fig has a ton of natural sweetness that is the centerpiece of this recipe and alongside maple syrup eliminates the need for any processed sugar. We also use whole milk and kefir instead of heavy cream to get the beautiful creamy texture, packed with great nutrients and probiotics.

Ice cream ingredients
 2 cups whole milk
 1 cup Kefir or Lassi
 ¼ cup maple syrup
 1 cup fresh fig
Honey Roasted Almonds Ingredients
 1 cup almonds
 3 tbsp honey
 ½ tsp sea salt

Honey Roasted Almonds

Preheat oven to 350F. Warm the honey just so it liquefies and pour it over the almonds.
Spread the almond/honey mixture onto a parchment lined baking pan.
Bake for around 15-25 minutes shaking the almonds every few minutes to prevent burning one side.

Making ice cream directions

Preheat the oven to 400 F. Place a piece of parchment paper over the baking pan. Spread the halved figs evenly over the roasting pan. Bake for 15 to 20 minutes or until caramelized and set aside to cool.

In a bowl whisk together milk and maple syrup, add in the caramelized figs. Let it chill over night or minimum 4 hours.

Prepare ice cream according to your ice cream machine manufacturer's instruction.

Add in the honey roasted almonds towards the last few mins of ice cream churning.
